Recipe: Vanilla Salted Maple Marshmallows
Ingredients:
½ cup of filtered water.
½ cup of brewed and cooled marshmallow root tea (recipe below). If you don’t have marshmallow root, you can use just plain filtered water too.
1 cup of maple syrup
½ teaspoon of vanilla powder (I buy it from here)
½ teaspoon of sea salt
3 tablespoons of gelatine powder (I use Ossa Organic - code: TAYYIB10. Yes, it is halal!)
2 tablespoons of MCT oil
Method:
First grease a wide dish with the MCT oil (I use a glass Tupperware container).
Bloom the gelatine in the filtered water; this allow the gelatine to properly absorb water and swell.
Pour the half a cup of marshmallow tea into a pot along with the maple syrup, vanilla and sea salt.
Gently warm up this mix on the stove until the mixture is hot—not tepid, not warm, not boiling, just HOT (you will see light steam rising and tiny bubbles may appear around the edges, but the liquid is not actively bubbling).
Stir in the bloomed gelatine into the maple syrup mixture until it is completely dissolved and take off the heat.
Use an electric whisk to beat the mixture for 8-12 minutes. Put a timer on! Because as the mixture changes colour and thickens towards the 10-12 minute mark, it can very, very quickly over-whisk which produces a rubbery texture and it won’t set properly. You must whisk until you see soft, glossy peaks form and the mixture is thick but still smooth and pourable. Depending on the quantity and quality of maple syrup you use, you may not need to whisk for a full 12 minutes, or you may need to whisk for a minute or two longer, hence use a timer and pay attention to the texture of the mixture.
Pour the gorgeous marshmallow fluff into your greased dish, cover and let it set for a few hours or overnight.
Cut into bite-sized squares.
Optional: sift arrowroot powder or powdered sugar over marshmallow squares to prevent them from sticking together.
Keep them covered and in the fridge to prevent them from drying out and consume within a week.
Aim for this texture when whisking is done and it’s ready to pour into your dish.
How to brew marshmallow tea:
Ingredients:
1 tablespoon dried marshmallow root (or 1 marshmallow root tea bag)
½ cup of hot filtered water
Method:
Bring the water to a boil and let it cool for a couple of minutes.
Pour the water over 1 tablespoon of dried marshmallow root.
Let it steep for 15-30 minutes.
Strain and it is ready to use.
